I made these wonderful energy bites this week. I have made many different versions of these but I do believe these are the best tasting ones I have ever made. They are so good as a snack, dessert, or before/after a workout.
And I will say they do not last very long
at my house! My kids and husband love them!
*3/4 cup Arrowhead Mills Brown Rice Flour (gluten-free)…(a healthy flour alternative)
*1/4 cup ground Stober Farms Flax
Meal…(great for extra fiber)
*1 cup shredded coconut
*1 scoop Protein
Powder…(Optional for added protein)
*1/4 cup Coconut Sugar…(low glycemic
*1/4 cup Almond Butter…(great for added protein and lowers
*1/4 cup melted coconut oil…(too many benefits to count)
*1/4 cup agave nectar…(low glycemic natural sweetener)
*1 tablespoon vanilla
*10 Frozen Strawberries…(fiber and many health benefits
*Makes 24 energy bites
1. Mix all ingredients in food processor until it forms a dough.
2. Roll into bite-size balls.
3. Roll the bites in shredded coconut…(optional).
4. Cool in freezer for 30 minutes.
Store in air tight container in fridge or freezer. They stay at the
right texture when they are cold and taste better too.
